Take 8 fresh wild rock oysters, carefully open each retaining the wonderful juice in a bowl & remove the oyster flesh keeping the beautiful bottom shells. Dry the oysters on kitchen paper. Blitz up a small bowl of breadcrumbs seasoned with lime zest.
Make a silky, sexy mousse by blending 150g queen scallops (white part only), 100ml double cream, 1 egg white, ¼ tsp smoked paprika & season with salt & pepper.
Gently cook the oyster juice in a pan with a 5cm chunk of cucumber (do what you want with the rest) cut into julienne strips, 25ml Pernod & a splash of double cream.
Take each oyster and smother one side with the scallop mousse, dip this into the breadcrumbs & shallow fry gently breadcrumb side down in a little butter until golden.
Arrange the pearly oyster shells on a platter of fresh samphire & spoon in the cucumber sauce. Pop each oyster back in the shell, golden crumb side up & top with a little salmon caviar.
Then in the gentle glow of candle light feed each other and obviously catch the escaping juices however you wish … of the oysters.
Serve with a chilled dry Muscadet et sevre et maine from the banks of the Loire.
