Wanda and Roqué loved picnics and had carefully chosen a mid-week treat for some peace and tranquility. For the Pesto Pasta Caprese Salad you’ll need to cook
100g orecchiette pasta, or heart shaped pasta in boiling salted water according to the packet instructions. Drain & allow to cool.
Blitz together 2 cloves garlic, 50g pine nuts, 50g Pecorino cheese, a handful of basil leaves & the juice of ½ lemon. Gradually add enough extra virgin olive oil while blending until you have a thick paste, or pesto.
Mix 3 tbsp pesto into the pasta & tip into a pasta bowl. Lay slices of vine tomato & slices of buffalo mozzarella on top like the petals of a flower & finish with salt, freshly ground black pepper & a final drizzle of olive oil.
