Seabass Ceviche.

Seabass Ceviche.
Take 1 small red onion very thinly sliced and drop into iced water for a few minutes. Drain and dry on kitchen paper. Pop into a bowl; add 250g Seabass fillet cut into 2cm x 3cm strips and 1/2 a red pepper very thinly sliced. Cool in the fridge.
Into a jam jar put the juice of 2 limes, ½ a teaspoon of salt and 1 small red chilli de-seeded and finely diced. Shake and cool in the fridge. Now everything is cool but the mood is getting Hot so bring everything together in the bowl and toss in one sensuous move – and toss fairly quickly.
Add a small bunch of coriander leaves roughly chopped, some mustard cress and pile into a ring on the plates. Add a good grind of black pepper (nothing like it!) and a drizzle of extra virgin olive oil. Job Done…Serve with chilled Tio Pepe sherry.
