Rose Water Bath time.
For Roqué and Wanda food is a passion with a capital P. The sweet summer smell of the rose garden and the warm sun on Wanda’s soft silky skin inspired Roqué to create a heavenly chicken dish with rosewater, adding the bitter sweet infusion of thyme, pert red pomegranate jewels ready to pop with juicy flavour and the crunch of toasted sugary salty almonds.
Roqué was a keen thigh lover and so rather than breasts he had chosen chicken thighs, which he massaged gently, but firmly with the marinade. The dish needed to infuse with the aromatic flavours for an hour or two so Wanda suggested a rose water bath to complement their supper.
