Setting the scene:
Ricotta Pancakes with Whipped Honey Butter & Pecan Nuts.
The present was ripped open – a beautiful rouge suede teasing whip. Wanda’s bottom blushed at the sight.
She loved his masterfulness and knew this little fellow would soon be put to fantastic use. But first there were other presents to open pancakes to share and honey butter to whip!
Wanda wore only Roqué’s shirt – nothing else and as she bent over to pop the cork of the blush Taitinger champagne, he decided the pancakes could wait a while, the pancakes were hot to eat but not as hot as Wanda…

Ricotta Pancakes with Whipped Honey Butter & Pecan Nuts.
First let’s whip some honey butter – why not! Put 150g softened unsalted butter into a bowl, add 2 tbsp milk & 2 tbsp honey. Beat until creamy & pale & keep safe!
Sift 80g plain flour, 1 tsp baking powder & a pinch of salt in a bowl. Another bowl – this time with 170g ricotta, 90ml milk & 2 egg yolks all whisked.
Last bowl the egg whites whisked until firm peaks – this should be familiar by now! Lots of bowls but your lover is definitely worth it. Now bring it all together – the flour mix, the ricotta mix & finally folding in the egg whites.
Heat a little vegetable oil in a non stick pan & add tablespoons of batter to make the pancakes. When they bubble on one side flip or toss as the mood takes you until they are golden on both sides.
Serve with oodles of whipped butter, scatter with pecan nuts & obviously more honey. Indulge.
