Pondicherry Fish Curry
One of their favourite places in the world was India and especially Kerala, but on this visit they went to the beautiful city of Pondicherry on the east coast, a unique part of India still sporting it’s very French influence.
Roqué had attempted to persuade the head chef of their hotel to let him into the kitchen.
Prem was reluctant but when Wanda piled on the charm he agreed and one afternoon together they cooked Meen Kulambu, a stunning fish curry served with rice, hand made chapatis and seasoned with pink Himalayan salt (just had to be done) and scattered with fresh curry leaves.
That night they devoured their creation on one of the beach tables at sunset under the coconut palms accompanied by ice cold Indian lager.
Now Wanda wore her gold and orange sari and filled the room with sandalwood incense and the seductive music of Ravi Shankar’s Spirit of India, slipping gently to sit at Roqué’s feet.
As they closed their eyes they drifted back to the golden shores of the Bay of Bengal and the delicious Indian heat as they devoured this orgasmic dish.

Pondicherry Fish Curry
For 2 lovers
Get on with it…
Make the fish paste first by blitzing together 1 small tomato, ½ small onion, 50g grated fresh coconut, 4 cloves garlic, 5 small dried chillies, 1 tsp black peppercorns & a big pinch of salt.
Heat 2 tbsp vegetable oil in a deep frying pan, add ½ tsp black mustard seeds & let them sizzle a moment. Spoon in the wonderfully fragrant paste with 1 tsp turmeric, 1 tsp brown sugar, ½ tsp ground coriander & 100ml water. Stir well & bring to the boil.
Reduce the heat & add 2 x 200g haddock fillets & cook gently for 6-7 minutes, spooning the mixture over the fish without disturbing it too much otherwise it will break up. Serve with basmati rice, chapatis & scatter with fresh coriander leaves.
