Get on with it…
Melting Passion Fruit Chocolate Hearts.
You will need a silicone Chocolate heart mould (about £1.50) Wash, dry & pop it in the fridge.
Slowly melt 150g of 74% dark chocolate in a glass bowl over a small pan of simmering water. The bowl must not touch the water. When the chocolate is molten take it off the heat & stir in 35gm of solid chocolate. This will temper the chocolate.
Pour this into the mould and completely fill each cup. Now, strange as it may seem, turn the mould upside down onto a plastic board & let the chocolate run out. When it’s stopped dripping, pop the mould into the fridge to set the remaining chocolate.
Scrape the chocolate off the board & save it for another time or just lick it up. Now take 3 fresh passion fruit, cut in half, scoop out the flesh & press through a sieve to leave a puree.
In a small pan heat 50g sugar with 50g water over a medium heat & keep stirring until you have syrup. Cool & add the passion fruit puree.
In the same way as you melted the dark chocolate now melt 150g milk chocolate.
When it’s molten add the fruit syrup and stir well. Pour this into the heart shaped moulds nearly to the top of each cup and refrigerate. Finally melt a little of the dark chocolate and seal each cup using a plate knife to smooth away unwanted chocolate.
After 2-3 hours pop out the set chocolates and sprinkle with edible gold glitter. You’ll be amazed where you find it later.
Passion fruit heaven!
