Duck Eggs with Asparagus and Smoked Salmon.

Get on with it…
Take 1 bunch of asparagus, bend each stem at the point where the woody part snaps away from the tender part and add to a shallow pan of boiling salted water. Move the pan to one side of the flame to cook the stems more than the spears for 4-5 minutes depending on the thickness of the asparagus. It should be cooked al dente. Add 2 duck eggs to a pan of boiling water and boil for 4 minutes.
Wrap each asparagus shaft with a small slice of smoked salmon and lay either side of an eggcup on a plate. Repeat with the remaining asparagus spears, put the cooked duck eggs in the cups and serve. Dribbling your yolk is essential, as someone will have to lick it up!
