Get on with it…
Put 1 small pack of really crunchy mixed leaves into a good sized bowl.
For the dressing (the undressing comes later) take a clean jam jar & into it add 1 tsp Dijon mustard, 2 tbsp Canadian maple syrup, 2 tbsp Champagne, 1 tbsp spoon white wine vinegar, 4 tbsp olive oil & season with salt & freshly ground black pepper.
Pop on the lid & shimmy & shake with your jar. Drizzle enough over the leaves to coat & toss them, as you do & arrange your glistening leaves in a serving dish.
Slice 4 large strawberries into heart shapes, ½ crispy apple, sliced & ½ small red onion, sliced & mingle these amongst the leaves. Lastly crumble 100g Dolcelatte cheese over the salad & scatter with a handful of toasted pine nuts.
Serve with warm crusty bread.

Champagne Salad, the Perfumed Garden has many references to pine nuts, the seed of the pine tree including this to restore a man’s libido. “A glass of thick honey plus 20 almonds and 100 pine nuts repeated for 3 nights”. Good luck with that one!
