
This is a delicious end to a date night dinner – definitely for sharing. It’s full of the excitement of exotic sun-drenched Caribbean islands at sunset, sailing on blue waters, diving into a plethora of cold ice creams and hot sauce, fruit and nuts complete the taste of tropical sun. Long time ago the amazing Harry Belafonte sang The Banana Boat song – come Mr tallyman tally me banana. Daylight come and I wana go home.
So, let’s get sailing. This is as much fun to make as it is to eat. Firstly, I’ve made jelly with blue food colouring, using 5 leaves of gelatine, a pint of water and a splash of Blue Curaçao liqueur warmed on the stove and then set in the fridge. Now a big banana sliced in half filled with 3 scoops of vanilla ice cream
The cargo is raspberries, strawberries, blueberries, cherries and slivers of fresh coconut all strapped down with hot salted caramel and cognac sauce, easily made in a small pan by gentle warming the caramel sauce and adding a good splash of brandy. Our boat needs masts – wafer rolls will do but I like theses chocolate sticks they will do the job. Grab 2 spoons and start rowing. Perfect finish for you and your lover as you sail away for a night of love and lust.
Here’s what you need –
1 firm banana, peeled and split lengthwise
Blue jelly set and chopped
3 scoops vanilla ice cream
2 tbs salted caramel and cognac sauce
1 tbs chopped strawberries
1 tbs blueberries
1 tbs fresh raspberries
3 fresh halved & stoned cherries
Slivers of fresh coconut
1 tsp Flaked Almonds
Sprigs of mint
Wafer straws
