Setting the scene:
A Muffin in Bed.
Wanda knew there was very little sexier than breakfast in bed with Roqué and when it includes a muffin you know you are onto a winner.
Clean crisp white sheets, steaming hot Columbian Arabica coffee, the morning papers (for heavens sake who needs those?) and the rays of the morning sunshine shimmering on naked skin.
The notes of soft love songs by their favourite singer dancing across the bed like angels.
They enjoyed the coffee, the music and the muffin…

Get on with it…
A Muffin in Bed.
Put 2 raw lobster tails (defrosted if frozen) into plenty of boiling water. Simmer for 8 minutes & then remove to cool. With sharp scissors snip through the middle of the shell from tail to top & then ease out the lobster meat.
Melt a knob of butter in a pan & cook 100g washed baby spinach until its silky soft & wilted. Keep warm.
Gently heat 170g jar Mary Berry’s Hollandaise sauce & poach 2 large free range eggs in water with a splash of white wine vinegar.
Split & toast 2 Sheldon’s oven bottom muffins (our muffin of choice!) & re-heat the lobster tails in a pan with a little butter.
Now bring it all together. On the base of each muffin start with spinach, then the lobster tail, then the poached egg & then drizzle with the Hollandaise.
Garnish with a teaspoon of salmon caviar, pierce the egg & add the muffin top to serve immediately to your lover.
